Makes 4 servings

Ingredients

½ pound white noodles or spaghetti
½ carrot, julienne
mini cucumber, julienne
1 tablespoon green onion, julienne
2 tablespoons cilantro, roughly chopped
¼ cup crushed peanuts

For the Dressing
¼ cup roasted sesame paste
1 clove garlic, minced
1 tablespoon sugar
2 tablespoons soy sauce
2 tablespoons rice vinegar

Instructions

  1. Bring a large pot of water to a boil. Cook noodles or spaghetti according to the package instructions and until noodles are just cooked through, or al dente in texture. Drain noodles and plunge into ice water to stop the cooking.
  2. Meanwhile, in a large mixing bowl by combining the dressing ingredients.
  3. Add noodles, carrot, cucumber, green onion and cilantro. Toss well until dressing is evenly distributed.
  4. Garnish with roasted peanuts.
  5. Serve immediately.
