When it’s hot outside, I am always looking for cold recipes that are not just salad. This cold sesame noodle is quick and easy to make. It’s incredibly delicious and you can make it into a meal by adding cooked shrimp or shredded chicken. You’ll love adding this to your summer meals!
Definitely adjust the ingredients to your liking. Add chili oil for some heat or add or substitute bean sprouts and cabbage for crunch and colour. Super versatile recipe that you can adjust to your liking.
Makes 4 servings
Ingredients
½ pound white noodles or spaghetti
½ carrot, julienne
mini cucumber, julienne
1 tablespoon green onion, julienne
2 tablespoons cilantro, roughly chopped
¼ cup crushed peanuts
For the Dressing
¼ cup roasted sesame paste
1 clove garlic, minced
1 tablespoon sugar
2 tablespoons soy sauce
2 tablespoons rice vinegar
Instructions
- Bring a large pot of water to a boil. Cook noodles or spaghetti according to the package instructions and until noodles are just cooked through, or al dente in texture. Drain noodles and plunge into ice water to stop the cooking.
- Meanwhile, in a large mixing bowl by combining the dressing ingredients.
- Add noodles, carrot, cucumber, green onion and cilantro. Toss well until dressing is evenly distributed.
- Garnish with roasted peanuts.
- Serve immediately.
Cold Sesame Noodles

I used a peanut- sesame paste cause that was al I could find, and some cabbage cause I had some left. Delicious !
