crab and mascarpone pasta sauce with ravioloni

I purchased some delicious Zara’s fresh ravioloni from Bosa Foods and wasn’t sure what kind of sauce to make. Low and behold there was a my “emergency” crab meat from Costco and a container of mascarpone. So this is what happened…

Crab and Mascarpone Pasta Sauce

Ingredients

1T extra virgin olive oil
1T butter
1/2 onion minced
3 cloves garlic minced
1/2 cup white wine
1/2t dried oregano
1/2-1 cup pasta water
250g crabmeat
1/2 cup mascarpone cheese
salt & pepper to taste

Instructions

1. Heat a medium frying pan on medium low and add olive oil and butter. Once butter is melted, sautée onion and garlic until onion is just starting to brown (approximately 7-10 minutes).

2. Meanwhile bring a large pot of salted water to a boil and cook your pasta.

3. Add white wine and oregano and scrape off any bits at the bottom and let simmer for 2 minutes.

4. Add 1/2 cup of pasta water and crabmeat.

5. Take the pan off the heat and add mascarpone cheese. Let it melt into a sauce. Add more pasta water as needed, depending on how thin or thick you want the sauce to be.

6. Add salt and pepper to taste.

7. Serve with pasta.

The green striped ravioloni is filled with spinach and ricotta cheese and the brown striped ravioloni is filled with porcini mushrooms. Delicious!
