gingerbread cookies

We had such a great time decorating gingerbread cookies last weekend for Hampers of Hope, a Christmas project organized by Dunbar Heights Baptist Church. These hampers go toward helping families who are staying at Monarch Place, a shelter and transition home for women and children escaping abusive homes. It was a great opportunity to teach our own children to be compassionate, generous and loving towards others.

This is the recipe I used that was passed on by a friend but I’m not exactly sure where it is from. It’s a simple recipe that you can make with your kids.

Gingerbread Cookies

Ingredients

2 cups flour
2t ground ginger
1t cinnamon
1/2t nutmeg
1/4t cloves
1/4t baking soda
1/4t salt
1/2 cup butter
1/3 cup packed dark brown sugar
1/3 cup molasses
1 egg

Instructions

1. In a medium bowl, whisk together the flour, spices, baking soda and salt

2. In the mixer, whip butter and sugar until light and fluffy

3. Beat in molasses and egg

4. With mixer on low, add dry ingredients, jut until a dough forms

5. Divide dough in half, wrap and chill until firm (1hour or so)

6. Roll out on floured parchment about 1/4 inch thick

7. Bake at 350° for 10-18 minutes depending on size of cookie until firm and
edges just begin to darken.

It makes approximately 2 dozen cookies about 3″ tall.
