After two weeks of summer vacation since preschool ended, the boy comes out of the playroom and says, “I’m bored, Mama.” So, we decided to bake cupcakes. Seeing as I always have lemons on-hand and I managed to find some blueberries, we decided to make these cupcakes. He loved helping to make these delicious morsels of lemony goodness but in the end… he didn’t actually like them (he’s not a huge cake fan). But he had fun making them.

Instead of the cream cheese frosting in the recipe, we made a simple lemon icing to drizzle on top. Mainly because I didn’t have any cream cheese at home.

Now I’m off to learn how to make dumplings!

 

Lemon Icing

Ingredients

2T fresh lemon juice
zest from 1 lemon
1c icing sugar

Instructions

Whisk all the ingredients together and drizzle on top of cooled cupcakes.
