Supreme Soy Sauce Chow Mein
This chow mein is a popular dish at Hong Kong style cafés as well as a side dish that compliments a lot of Cantonese dishes. I’m not sure why it’s called supreme but it is very tasty and simple to make at home.

- ½ pound egg noodles chow mein
- 2 tablespoons avocado oil divided
- ½ onion sliced
- ½ red pepper sliced
- 4 ounces bean sprouts
- 2 green onion cut into 2 inch pieces
- 1 tablespoon sesame oil
In a small bowl, mix all the sauce ingredients together. Set aside.
Prepare the egg noodles as directed on the package. Drain well.
In a wok or large frying pan on medium heat, add 1 tablespoon avocado oil, onion and red pepper. Stir fry for about a minute. Add the bean sprouts and stir fry for another 30 seconds.
Add the noodles and loosen them. Drizzle 1 tablespoon avocado oil around the edge of the wok. Let it sit for a minute or two to crisp up the noodles a bit.
Add the sauce. Mix well.
Add the green onion. Cook until the chives are wilted. Turn off heat. Drizzle in sesame oil.
Serve on a platter.
