I’m not really good at preparing meat ahead of time. For example, any recipe that requires marinading overnight likely won’t make it at our house. If you’re like me, you don’t think about what to make for dinner until about 5pm. This is one of those recipes that you can toss together in a couple of minutes and throw it in the oven for about 45 minutes. All of dinner can be ready in an hour.
Baked Carmelized Chicken
Ingredients
8 chicken thighs
1/2 cup honey
1/4 cup soy sauce
1T ketchup
1T olive oil
1 clove garlic minced
Instructions
1. Preheat oven to 375 degrees F. Wash the chicken, pat dry and arrange thighs, skin side up, in a 9×13 pan.
2. Put the remaining ingredients in a measuring cup and stir to combine.
3. Pour the sauce over the chicken thighs and bake until cooked through and the skin is caramelized, about 45-50 minutes. I like to baste them twice during cooking, every 15 minutes or so.
Serve with rice and Japanese Gomae or buttered corn. My kids also enjoy this with a package of seaweed.
