guacamole

Dude was out-of-town on a photo shoot and took ALL the memory cards for the cameras with him. I was left with my iPhone 4 to take pictures of the guacamole, so apologies in advance for the lower quality shots.

For my basic guacamole I use only five ingredients and do not add any peppers or hot sauce since the kids enjoy it so much.

Basic Guacamole

Ingredients

2 avocados
2 stalks green onion finely chopped
6-8 sprigs cilantro finely chopped
1/2 lemon juiced
1/4t kosher salt

Instructions

Peel, pit and chop up the avocados.

Mash the avocado with a fork. Add green onion and cilantro and mix well.

Then add the lemon juice and salt and mix well.

Serve with tortilla chips.

I like using green onions because they are milder than regular onions but you can use 1/4 cup of a regular onion chopped finely instead.

Variations:

For a mildly spicy version, add a finely chopped seeded jalapeño pepper. You can leave the seeds in if you want it more spicy. Also for an even spicier version, try using serrano peppers. Seeds are what make the peppers spicier so you can choose to leave them in or remove them. You can also add a few drops of Tabasco sauce. For more colour add a chopped up tomato.

    • It just depends on how much you want to make. Since it browns so easily, I only make as much as I need. But you could also use a bit more lemon juice to keep it greener longer. Enjoy!
