Fried rice is one of the easiest meals to cook. Using what you already have, it’s going to be delicious and cheap.We love breakfast for dinner and this fried rice is no exception. Bacon and eggs just go together. I’m using peas but feel free to add your favourite veggies.I always have bacon in the fridge. It’s the perfect package of meat that I can turn into a meal. But you can use any meat like Chinese sausage, spam, ham, leftover chicken, steak or pork chop.Generally, I use about 1 teaspoon of soy sauce per cup of rice and often will mix it up with oyster sauce, fish sauce, kecap manis and/or dark soy sauce. Use what you like and the flavour will vary depending on what you put in.Use what you have, make it your own.

Ingredients
4eggslightly beaten
2tablespoonsneutral cooking oil
6slicesbaconcut up
½onionchopped
2clovesgarlicminced
3cupsleftover cooked rice
½cupfrozen peas
2teaspoonsdark soy sauce
1teaspoonsoy sauce
1green onionchopped
Instructions
In a wok or large frying pan on medium high heat, add 2 tablespoons oil. Add eggs and cook until almost completely cooked through and remove.
Add bacon. Cook until browned and slightly sticky. Push the bacon to the sides. Discard some of the fat, if desired.
Add onion and cook for 2 minutes until soft and transparent. Add garlic and cook for another 30 seconds or until fragrant.
Add rice, carefully breaking up the larger chunks and cook for 2-3 minutes, until heated through and rice has separated. Stir in dark soy sauce and soy sauce.
Stir in the peas. Add the cooked eggs. Chop them up a bit with the spatula and mix into the rice. Cook for another minute to heat the peas through. Turn off the heat, transfer to a serving plate and garnish with green onion.
