Yangzhou Fried Rice

Ingredients

  • 2 tablespoons vegetable oil divided
  • 3 eggs lightly beaten
  • 12 small shrimp
  • 6 ounces char siu Chinese barbecued pork, chopped
  • 4 cups cold leftover rice
  • 1 tablespoon soy sauce
  • ½ cup frozen peas
  • 1 stalk green onion chopped

Instructions

  • Heat a wok or large frying pan on medium high heat, add 1 tablespoon vegetable oil and scramble the eggs until slightly undercooked. Remove the eggs into a bowl.
  • Turn the heat down to medium. Add 1 tablespoon vegetable oil. Add the shrimp and stir fry for 1 minute. Remove and add to the cooked eggs.
  • Add char siu and cook until fragrant and heated through, about 1-2 minutes
  • Add rice, carefully breaking up the larger chunks and cook for 2-3 minutes, until heated through. Stir in soy sauce.
  • Add peas and toss until cooked through, about 1 minute. Mix in the cooked eggs and shrimp. Turn off the heat, stir in green onion.
  • Serve in individual bowls.
