I love fried rice because it is so versatile. You can pretty much add whatever you want and you’ll have a delicious all in one meal that is perfect for breakfast, lunch or dinner. This is a very basic fried rice but you can substitute the meat with another protein and the peas with another vegetable. The options are endless!
Makes 4 servings
Ingredients
2 tablespoons vegetable oil, divided
3 eggs, lightly beaten
5 ounces small shrimp
6 ounces char siu (Chinese barbecued pork), chopped
4 cups cold leftover rice
1 tablespoon soy sauce
½ cup frozen peas
1 stalk green onion, chopped
Instructions
- Heat a wok or large frying pan on medium high heat, add 1 tablespoon vegetable oil and scramble the eggs until slightly undercooked. Remove the eggs into a bowl.
- Turn the heat down to medium. Add 1 tablespoon vegetable oil. Add the shrimp and stir fry for 1 minute. Remove and add to the cooked eggs.
- Add char siu and cook until fragrant and heated through, about 1-2 minutes
- Add rice, carefully breaking up the larger chunks and cook for 2-3 minutes, until heated through. Stir in soy sauce.
- Add peas and toss until cooked through, about 1 minute. Mix in the cooked eggs and shrimp. Turn off the heat, stir in green onion.
- Serve in individual bowls.
Yangzhou Fried Rice
