
In my younger days, I remember going out for Wing Wednesdays where special prices ranged from 25 cents a wing to $3.99 per pound. My favourite ones were the hot wings or Buffalo wings even though I couldn’t really handle the spiciness. But I found that if I just kept eating, I was good!
Since I don’t like to deep fry at home, not to say I won’t eat anything deep fried, this is how I make crispy chicken wings regardless of the type of sauce or flavour it will have in the end. So, feel free to change it up. For the kids, I do a sweet soy sauce.
Buffalo Style Chicken Wings
Ingredients
2lbs chicken wings separated, tips removed
1/2 cup flour
salt and pepper to taste
1t cayenne pepper (optional and if you like it extra spicy)
1/4 cup butter, melted
1/4 grapeseed oil
Sauce Ingredients
1/4 cup butter
1/4 cup hot sauce, like Frank’s
cayenne pepper (optional to taste)
Instructions
- Move the oven rack to the top rack and preheat the broiler.
- Wash and pat dry the chicken wings and put them into a large plastic resealable bag. Add flour and salt & pepper and cayenne if using. Give it a good shake.
- Line a sheet pan with parchment paper. Combine 1/4 cup melted butter with grape seed oil and baste each wing liberally.
- Broil wings for 8 minutes. Turn the wings over and broil for another 6 minutes.
- Meanwhile melt 1/4 cup butter in a small sauce pan. Once melted, add the hot sauce and cayenne pepper, if using and whisk until combined and heated through.
- Once the wings are cooked through, place them in a large mixing bowl. Add the sauce and toss until coated. Serve on a platter.
