blueberry ice cream

Everyday after school, the ice cream truck is sitting in front of the school. Everyday, the princess asks, “Can I have an ice cream?” Everyday, I say, “No.” Followed by a very sad, “Aw…” I know… it’s sad… and I’m mean… but I can’t bring myself to spend money on who-knows-what’s in those ice cream bars. So, I promised to make her some blueberry ice cream tonight.

THIS is why I LOVE my Vitamix. In less than 60 seconds, fresh blueberry ice cream made from real ingredients.

Blueberry Ice Cream

Ingredients

3/4 cup whole milk
1/2 cup ice
2 cups frozen blueberries
1/2-3/4 cup sugar (adjust according to sweetness of berries and taste)
1/2t vanilla extract

Instructions (as per the Vitamix manual)

Place all ingredients in Vitamix container in order listed. Secure 2-part lid. Select Variable, speed #1. Turn machine ON and quickly increase speed to #10; then to HIGH. Use tamper to press ingredients into the blades while processing. In about 30-60 seconds, the sound of the motor will change and four mounds should form in the mixture. Stop machine. Do not overmix or melting will occur. Serve immediately.

Note: if the consistency is more like a milkshake, add another 1/2-1 cup of ice cubes and blend.

The consistency is more like a soft serve ice cream but the kids loved it and gobbled it up… and so did I!

  • I didn’t know I could make ice cream in the vitamix [or maybe I forgot…or maybe I should use it more] Will have to try it…might be easier than the ice cream attachment.

    • LOL! That was one of the reasons I bought the Vitamix. Definitely faster results than the ice cream attachment but the texture is not the same as hard ice cream… But yummy nonetheless! I’ll be posting an espresso ice cream recipe for the ice cream attachment shortly.
