Do you ever walk through the fresh seafood section of Costco and wonder what to do with a whole filet? This is my favourite way to prepare a whole steelhead trout fillet. It only uses four main ingredients plus salt and pepper and it is an absolute cinch to make. I am sure whatever fish you choose to use, it’ll be great! And you’ll love how easy it is.

Steelhead trout is similar to salmon but more mild in flavour and it only takes about 20 minutes in the oven. In that amount of time you can prepare a simple salad and maybe some rice as well… a healthy meal in less than half an hour with minimum effort, perfect for those extra busy days..

Ingredients

2 pounds steelhead trout fillet
Kosher salt
Fresh ground pepper
¼ cup mayonnaise

For the Panko Topping
¾ cup panko
¼ teaspoon kosher salt
½ teaspoon fresh ground pepper
2 tablespoons olive oil

Instructions

  1. Preheat oven to 425℉.
  2. In a small bowl, combine panko topping ingredients making sure the olive oil evenly coats the panko.
  3. Line a sheet pan with parchment paper or foil. Lay the fish skin side down, tucking under the thinner edges. Season the fish with salt and pepper.
  4. Spread mayonnaise evenly over the fish.
  5. Evenly top with the panko topping, pressing lightly into the mayonnaise.
  6. Place on the middle rack of the oven and bake for 18-22 minutes, depending on the thickness of the filet. Check for doneness in the middle at 18 minutes (the fish should start to flake easily) and put back in the oven in 2 minute increments if necessary until desired doneness.
