SPAM is one of Dude’s favourite ingredients for fried rice. This is actually his recipe since I’m not a huge fan but I will make it for him and the kids since they love it so much.

I have to say it is a great staple to have on hand and it is also great when it’s pan fried in thin slices for serving with eggs or in a hot bowl of instant ramen.

Even Dude knows to make sure to prepare all your ingredients in advance as the cooking part will go fairly quickly and there won’t be time to chop and add.

Makes 2-3 servings

Ingredients

3 large eggs, slightly beaten
½ small onion, chopped
½ can Spam, ½ inch cubes
2-3 cups cold leftover rice
2 tablespoons avocado oil
½ cup frozen peas
2 teaspoon soy sauce
1 green onion, minced, white and dark green parts separated

Instructions

  1. Heat a wok or large frying pan on medium high heat, add 1 tablespoon cooking oil and scramble the eggs until slightly undercooked. Remove the eggs into a bowl.
  2. Turn the heat down to medium. Add 1 tablespoon cooking oil. Add onion and white parts of green onion and fry for 2 minutes, until they are translucent. Add spam and cook until slightly crispy, about 2-3 minutes. 
  3. Add rice, carefully breaking up the larger chunks and cook for 2-3 minutes, until heated through. Stir in soy sauce.
  4. Add peas and toss until cooked through, about 1 minute. Mix in the cooked eggs.
  5. Serve in individual bowls. Garnish with remaining green onions.
