I was recently thinking about these garlic noodles that I first tasted when we were living in San Francisco at Crustacean. It’s one of those dishes that has so much garlic, you can only partake with your other garlic-loving friends, or expand your personal space post-meal.

Makes 4-6 servings

Ingredients

1 pound spaghettini or yellow noodles
¼ cup unsalted butter
1 tablespoon olive oil
6-8 cloves garlic, minced
½ cup freshly grated parmesan cheese
1 stalk green onion, chopped

For the Sauce

1 tablespoon soy sauce
1 tablespoon oyster sauce
1 tablespoon fish sauce
2 teaspoons brown sugar
2 teaspoons sesame oil

Instructions

  1. Bring a large pot of water to a boil. Cook noodles or spaghettini according to the package instructions and until noodles are just cooked through, until al dente in texture. Drain noodles.
  2. Meanwhile, in a small bowl, combine soy sauce, oyster sauce, fish sauce brown sugar and sesame oil. Set aside.
  3. In a wok or large frying pan on low heat, melt butter, add olive oil and garlic. Let cook for 2-3 minutes, stir frequently and make sure it does not brown. Add the well drained pasta and toss, loosening up all the noodles. Add the sauce and continue to toss to make sure the sauce is evenly distributed. Turn off the heat. Add parmesan cheese and continue to toss the pasta until the cheese has melted.
  4. Serve on a platter and garnish with green onion.
