We often have leftover rice in the fridge which is perfect for fried rice. It doesn’t take lot of ingredients to make fried rice good. Simply choose a protein, a couple eggs, a vegetable and some aromatics and you’ll get a delicious meal in no time. Simple fried rice is the best fried rice. And garlic and shrimp just takes this to the next level!

Makes 2 servings

Ingredients

3 eggs, lightly beaten
3 cloves garlic, minced
4 ounces shrimp, shelled and deveined
½ onion, finely chopped
2 cups cold leftover rice
2 tablespoons vegetable or canola oil, divided
2 teaspoons soy sauce
2 teaspoons oyster sauce
½ cup frozen peas
2 stalks green onion, chopped
Pinch ground white pepper

Instructions

  1. In a wok or large frying pan on medium high heat, add 1 tablespoon vegetable or canola oil. Scramble the eggs until slightly undercooked. Remove the eggs into a bowl.
  2. Turn the heat down to low. Add 1 tablespoon vegetable or canola oil and garlic, cook for 30 seconds, until fragrant. Add shrimp and cook for another 30 seconds until they are just barely cooked. Remove the shrimp and add it to the eggs.
  3. Turn the heat up to medium. Add onion and stir fry for 1 minute.
  4. Add rice, carefully breaking up the larger chunks and cook for 2-3 minutes, until heated through. Stir in soy sauce, oyster sauce and ground white pepper.
  5. Add peas and toss until cooked through, about 1 minute. Mix in the cooked eggs and shrimp. Turn off the heat, stir in green onion.
  6. Serve on a platter and garnish with a pinch of ground white pepper.

    This is my first time responding to your web page. As of today, I have made from your recipes: Won Ton Soup, Ginger Beef and Pork stir fry. I must say, I am so impressed. You make it so easy to follow your recipes. Your calm demeanor is very welcoming, your knife skills are awesome and the method you follow in the cooking process is terrific. Today I am making the Garlic Prawn fried rice. Looking forward to it so much. I am over on Vancouver Island. So getting the products, for instance the Black Vinegar is a little difficult. However, I just ordered it from Amazon. Lol.
