One of our favourite condiments is ginger and green onion sauce that is often served with Hainanese chicken. Wouldn’t that flavour be awesome in fried rice? Oh yeah!

This simple fried rice can be eaten on it’s own or served as a side. Also, feel free to add chicken or shrimp to make it a full meal.

Makes 3-4 servings

Ingredients

2 tablespoons avocado or neutral cooking oil, divided
1 tablespoon ginger, grated
3 stalks green onion, chopped
3 eggs, lightly beaten
1 pinch kosher salt
3-4 cups cold leftover rice
1 tablespoon soy sauce
1 teaspoon sesame oil

Instructions

  1. Heat a wok or large frying pan on medium high heat, add 1 tablespoon cooking oil and scramble the eggs until slightly undercooked. Season the eggs with a pinch of salt. Remove the eggs into a bowl.
  2. Turn the heat down to medium low. Add 1 tablespoon cooking oil. Add ginger and green onion.
  3. Add rice, carefully breaking up the larger chunks and cook for 2-3 minutes, until heated through. Stir in soy sauce.
  4. Mix in the cooked eggs. Turn off the heat, stir in sesame oil.
