For festive occasions like Chinese New Year, weddings and birthdays, noodles are often served to represent long life. I am most familiar with the ones served at Chinese banquets or ten course meals where the noodles are served at the very end. These longevity noodles are usually made with a deep fried wheat noodle called yee mein.

This noodle dish is often served alongside very flavourful dishes so it is not meant to be super saucy or strong flavoured. The mushrooms and garlic chives compliment them perfectly and adds to the subtle flavour of this dish.

Even though they are often served at banquets, they can be quite easily made at home with just a few ingredients. 

Makes 4 servings

Ingredients

½ pound yee mein
2 tablespoons avocado oil, divided
6 shiitake mushrooms, sliced
5 ounces garlic chives, cut into 2 inch pieces
1 teaspoon sesame oil

For the Sauce
½ cup water
1 teaspoon sugar
1 teaspoon light soy sauce 
1 teaspoon dark soy sauce
1 tablespoon oyster sauce
¼ teaspoon ground white pepper

Instructions

  1. Fill a wok or large pot with water and bring to a boil. Add the yee mein and cook for about 2 minutes until all the noodles are separated. Drain the noodles well.
  2. Empty the water and wipe down the wok or use a large frying pan on medium heat, add 1 tablespoon avocado oil, chive bottoms and mushrooms. Add another tablespoon avocado oil, if needed. Stir fry for about a minute.
  3. Add the sauce ingredients and bring to a boil.
  4. Add the noodles and gently toss them in the sauce until all the sauce is absorbed.
  5. Add the remaining chives. Cook until the chives are wilted. Turn off heat. Drizzle in sesame oil.
  6. Serve on a platter.
