maple salmonWild salmon caught my eye the other day at Costco. Several weeks ago, I also bought 6lbs of mussels from Costco for $12! I know… who thinks of Costco for seafood. I wouldn’t normally, but if you’re buying a lot, it’s not a bad place to check out.

Anyway… wild salmon… here is an easy recipe for maple salmon that I found on allrecipes.com. A little maple syrup, soy sauce, garlic, salt & pepper tossed in a resealable bag. The only other thing I added was a thumb sized piece of ginger, sliced. Marinate the salmon for 30 minutes and cook for 15 minutes at 400 degrees F. I was super lazy so I just made rice in the rice cooker and microwaved a package of edamame. Voilá… dinner is served.

*Tips: Use parchment paper to line your pan makes for easy clean up. Always check your fish at least 5 minutes before stated cook time in a recipe to ensure moist and yummy results. The fish will continue to cook if you leave it in the pan. So, I generally will take it out when it’s a little bit undercooked and let it sit in the pan until ready to serve.

  • Try cooking the salmon with spicy sweet and sour barbeque sauce in the air fryer just brush the sauce on the fish on both sides and put in the air fryer uncovered for 12 minutes @350 and it will be super tasty and moist center rack
