Who would think to buy mussels at Costco? At $12 for 6 pounds, I couldn’t resist! We had a great mussel feast where I’m sure the 6 year old princess ate almost a pound on her own.

I used Ina Garten’s Mussels in White Wine recipe and not only was it delicious, it was quite easy to make! I happened to have all the ingredients at home, except the white wine. I don’t normally make a special trip out to the store to get missing ingredients but I wasn’t sure if it would taste quite right without it seeing as white wine was in the title of the recipe. Good thing we live near a liquor store that also happens to opened on a Sunday, so my husband was nice enough to walk up to get me a bottle. (Yes, American friends… in Canada, we have liquor stores that just sell liquor. We can’t just walk into any old grocery store to buy it.)

I doubled the recipe, so after chopping a few shallots by hand, it occurred to me that I could just blitz them all in a food processor. Duh! From several minutes of chopping (and crying, because shallots make you do that) to seconds. SECONDS, people! And no tears!

The broth was amazing! You could probably use the broth for a bouillabaisse. Oooh… now that sounds yummy!

Shellfish intimidates me, but this recipe made it easy to give it a try. Hope you enjoy!

Tips: When cooking the mussels, I let them cook for about 6 minutes covered and then started to pull them out one at a time as they opened up so not to over cook them. And remember to use a food processor or chopper when you need a lot of shallots or onions, minced. It will save you a lot of time, work, and tears!
