Ingredients

4 pounds chicken thighs and/or drumsticks
1 tablespoon avocado oil
1 cauliflower, cut into florets

For the Marinade
2 teaspoons fresh ginger, grated
4 cloves garlic, minced
6 tablespoons soy sauce
2 tablespoon dark soy sauce
6 tablespoons brown sugar
1-3 tablespoons gochujang
2 tablespoons green onion, chopped

Instructions

  1. In a medium mixing bowl, combine the marinade ingredients. Add the chicken and mix well. Cover and let marinate in the fridge for at least 2 hours and up to overnight.
  2. Preheat the oven to 425°F.
  3. Place the chicken onto a sheet pan, skin side up.
  4. Add the oil to the leftover marinade, then add the cauliflower and toss well. Scatter cauliflower around the chicken pieces.
  5. Bake for 35-40 minutes until chicken is cooked through and juices run clear.
  6. Alternatively, you could grill the chicken on the barbecue for extra flavour.
  7. Place chicken and cauliflower on a serving platter and garnish with green onion.
  8. Serve with rice.
