I’m not sure when this actually happened but many years ago I started reading labels. I stopped purchasing packaged foods (e.g. ready-to-use sauces, cake mixes, baked goods) that contained words I couldn’t pronounce. I concluded that I was going to stop putting things into my body that I didn’t understand. And I started to cook and bake from scratch whenever possible. I guess that’s when I became more passionate about food.
One of the things I keep on hand is Nigella Lawson’s homemade pancake mix. It’s not that hard to make a batch compared to running out and buying a processed box. They tasted good but they were a bit flat for my liking. However, it was an easy weekend breakfast item and my kids enjoyed them.
I love Nigella but all the recipe books I have of hers are in weight measurements; so, since I didn’t have a scale, I tried to convert the weight measurements into cups and tablespoons. Boy, was I way off!
Well… I finally purchased the OXO Good Grips Stainless Food Scale and what a difference it made! Now my pancakes are fluffy and the batter is thicker! So excited to share this with you and I can’t wait to try out more of her recipes!
