peach lemonade

We had such a HOT summer and so far the weather is continuing to be really nice as we enter into fall! Still perfect weather for lemonade.

There’s a guy who sells peaches, cherries and nectarines in our neighbourhood over the summer on West 33rd Avenue and Cambie Street. The kids call him the “Peachman”. Oh my goodness… they were some of the sweetest and juiciest peaches we have ever had! He owns an orchard in the Okanagan and picks and sells his fruit here in the summer.

So, the princess suggested we add peaches to our lemonade. What a great idea!

Peach Lemonde

Ingredients

1c boiling water
3/4-1c sugar
1 pinch salt
3c ice or ice cold water
6 lemons (yielding approximately 1 cup of juice)
6 small peaches (yielding approximately 2 cups of fruit purée)

Instructions

1. Pour boiled water into a large heat proof measuring cup. Dissolve sugar and salt in the hot water by stirring until clear. Add 3 cups of ice to cool down the simple syrup.

2. Juice 6 lemons which should yield about a cup of lemon juice.

3. Cut the peaches in half and remove the pits. Place the peaches in a blender. Add lemon juice and run the blender on chop. I like the texture of the fruit but you can purée it for a smoother texture. Also, I don’t mind the skin, so I don’t bother peeling the peaches but you can peel them before putting them in the blender if you want.

4. Mix the simple syrup and peach/lemon mixture in a jug and serve.

*Tips:

  • I put the peaches in the blender along with the lemon juice to keep the peaches from browning.
  • To peel the skin off the peaches, score an ‘x’ on the bottom with a small knife. Pour boiling water over the peaches until covered and rest for 1 minute. Take the peaches out of the water and peel off the skin. It should come off fairly easily. This method also works for tomatoes.
  • If you don’t have ice, add 3 cups of cold water after the simple syrup cools down.
  • If you don’t have peaches, try using other summer fruit like strawberries or raspberries.

  • ooh yes. I make all my food for my son! His fave’s seem to be broccoli, beets, crtaors and cantalope! (but he also enjoys eating a turnip/rootabaga blend, peaches/spinach blend, eggplant, and yams! He doesn’t seem to care for the texture of green beans! haha) I loove knowing exactly what he’s eating, and that it’s not a bunch of sugary food.
