Even my kids love prime rib. Since they were able to chew meat, every birthday dinner hosted by my mom must include prime rib. But sometimes she leaves cooking it to me and so I have tried several methods and I am always nervous about ruining a very expensive cut of meat.
This recipe is by far the easiest and least likely to ruin… Although this has happened to me once. Well, just once that I remember. We like our prime rib medium rare. If you do a search on what temperature to remove your roast to get medium rare, you will find 145 degrees F. Even my thermometer says that. So, I did that once and while the roast was resting, the temperature continued to climb. Next thing you know, it was well done! You can only imagine my horror. Lesson learned, for medium rare, remove the roast between 125-130 degrees F.
Easy Prime Rib
Ingredients
3-5 bone prime rib
Beef fat or butter at room temperature
Salt
Pepper
Instructions
1. Let the roast sit at room temperature for at least an hour.
2. Preheat oven to 375 degrees F.
3. Ask the butcher for an extra piece of beef fat. Secure the fat to the top of the roast with a few toothpicks. Or if using butter, rub butter all over the roast. This makes the roast extra tasty.
4. Season the roast all over with salt and pepper. You may use your favorite seasoning blend or even stuff cloves of garlic by poking holes in the roast with a knife and pushing cloves of garlic into the crevices. I like to keep it simple with just salt and pepper.
5. Place the roast in the oven for exactly 1 hour regardless the size of your prime rib.
6. Turn off the oven and let the roast slowly cook for at least 3 hours. Do NOT open the oven door no matter how tempting it is to peek. If you open the door, you will let the heat out and this method will not work.
7. About 30-45 minutes before you wish to serve the roast, turn the oven back up to 375 degrees F (this would be the time to stick in your meat thermometer if you had not already done so.) If you have a larger roast, you may want to give 45-60 minutes before serving time. Heat it up until the desired temperature is met. Meanwhile, make the Au Jus. For medium rare, remove the roast between 125-130 degrees F.
8. Cover the roast with a piece of aluminum foil and let rest for 10 minutes before slicing.
Au Jus
Ingredients
1/4 cup beef fat drippings
1T flour
2 cups beef broth
2 green onions cut into 2-3 inch lengths
Salt and pepper
Instructions
1. Heat up the drippings in a small pot.
2. Whisk in flour and cook for 2 minutes.
3. Pour in beef broth and bring to a boil. Add green onions and let simmer until slightly thickened.
4. Strain and serve with prime rib.
