From past experience, I’ve decided that volunteering for pumpkin patch field trips was not my thing. Both kiddies’ classes went together this year and I… um… passed. There will be other field trips to volunteer for.
With both of them going, meant two pumpkins this year. They each drew their Jack O Lantern faces on a piece of paper and I tried to carve them as close to their drawings as possible. This was my attempt. Pumpkin carving… also not my thing.
So, we had a tonne of seeds and I have never tried roasting them before. Mainly because I was too lazy to clean off all the pulp. But I thought I’d give it a try this year and they are surprisingly addictive! Can’t believe I’ve been missing out all these years. Just wondering, is it wrong for a Jack O Lantern to want some?
Roasted Pumpkin Seeds
Ingredients
fresh pumpkin seeds
2t melted butter
sea salt (to taste)
Instructions
1. Preheat the oven to 300 degrees F.
2. Remove the large chunks of pulp from the seeds. Don’t worry about getting it all, the little bits of pumpkin will add flavour.
3. Toss the pumpkin seeds in the butter and sea salt.
4. Spread a single layer of seeds on a sheet pan and roast in the oven for 45 mins, stirring occasionally.
5. When cooled, store in an airtight container but chances are, there won’t be any left!
