When you’re feeling hangry… this quick and easy scallion noodles will definitely satisfy. Keep these basic Asian sauces in your pantry and you can make these noodles anytime.

Ingredients
6 green onions, cut into 2 inch pieces
2-3 tablespoons vegetable or canola oil, divided
2 tablespoons soy sauce
2 tablespoons dark soy sauce
2 tablespoons oyster sauce
1 tablespoon sugar
1 pound thin white wheat noodles
4 eggs
Instructions
- Prepare the noodles according to the package.
- Meanwhile, in a heavy frying pan on medium high heat, add 1-2 tablespoons vegetable or canola oil and fry eggs however you like them. Remove and set aside.
- Turn heat to medium low. Add 1 tablespoon vegetable or canola oil and add green onions. Cook until they start to wilt and caramelize.
- Add soy sauce, dark soy sauce, oyster sauce and sugar. Mix well. Turn off the heat.
- Drain the noodles and add to the pan, toss until well coated by the sauce.
- Serve in individual bowls, topped with a fried egg.
