We often serve Chinese greens with our meals. They are easy to make and are the perfect accompaniment to balance out a typical Chinese homestyle meal. Yue Choy, also known as Choy Sum, is one of our favourites as the flavour is slightly sweet and delicate.
Makes 4 servings
Ingredients
Water
2 teaspoons salt
1 tablespoon oil
1 pound yue choy or choy sum
1 tablespoon oyster sauce
Instructions
- Soak the vegetables in a tub of cold water with 2-3 teaspoons of salt for at least 3 minutes. Run water in between the leaves and the stem to get rid of any dirt. Remove any yellow flowers. Trim the bottoms. Rinse well.
- Add salt and oil to a medium pot of water. Bring it to a boil on high heat.
- Once the water is boiling, add vegetables. Cook for 1 minute.
- Drain and serve with oyster sauce on the side.
