This chow mein (豉油王炒麵) is a popular dish at Hong Kong style cafés as well as a side dish that compliments a lot of Cantonese dishes. I’m not sure why it’s called supreme but it is very tasty and simple to make at home.

My original recipe can also be found in my cookbook Daily Special.

Makes 4 servings

Ingredients

½ pound egg noodles (chow mein)
2 tablespoons avocado oil, divided
½ onion, sliced
½ red pepper, sliced
4 ounces bean sprouts
2 green onion, cut into 2 inch pieces
1 tablespoon sesame oil

For the Sauce
1 teaspoon sugar
1 tablespoon light soy sauce
2 tablespoons dark soy sauce
1 tablespoon oyster sauce
1 tablespoon water
¼ teaspoon ground white pepper

Instructions

  1. In a small bowl, mix all the sauce ingredients together. Set aside.
  2. Prepare the egg noodles as directed on the package. Drain well.
  3. In a wok or large frying pan on medium heat, add 1 tablespoon avocado oil, onion and red pepper. Stir fry for about a minute. Add the bean sprouts and stir fry for another 30 seconds.
  4. Add the noodles and loosen them. Drizzle 1 tablespoon avocado oil around the edge of the wok. Let it sit for a minute or two to crisp up the noodles a bit.
  5. Add the sauce. Mix well.
  6. Add the green onion. Cook until the chives are wilted. Turn off heat. Drizzle in sesame oil.
  7. Serve on a platter.

We are GF so I used Ramen noodles with this as I can get them GF. We LOVE it! I have made it 6 times this week, yes 6 times! Thanks for the amazing recipe! It’s been WAY too long since we’ve had something so tasty, being GF has limited our dining out options. Not limited any more!
