Now that the weather is getting colder and more wet, I crave comfort foods like soups, stews, chowders, big bowls of Asian soup noodles… One of my favourites is French onion soup. If it’s on the menu, I will more than likely order it, as I am always on the search for the best French onion soup. This, however, is not an authentic recipe but it works for a simple meal at home. If you’re looking for an authentic recipe there are lots to be found. Most require caramelizing the onions which could take hours and making your own beef stock. If you’re like me, you don’t have that amount of time.

French Onion Soup
Serves 4

Ingredients

1/4 cup butter
2 onions thinly sliced
2T flour
1/4 cup white wine
5 cups beef broth
1/4t dried thyme
4 slices good day-old bread
4 slices gruyere cheese

Instructions

1. Melt butter in a medium pot on medium heat and cook onions until very soft and starting to brown (approximately 20-30 minutes).

2. Stir in flour and cook for another minute or two.

3. Add wine, beef broth and thyme. Bring to a boil and turn heat down to a simmer for 30 minutes.

4. Top slices of bread with cheese and toast in the toaster oven until cheese has melted.

5. Serve with cheese toast on top of bowls of soup.

I don’t have oven-proof bowls to do it right so this is the best way I know how to get the same effect. Also, I don’t have cheese on my bread in the photo above as my eggnog latte took up my dairy tolerance for the day. You’ll want more than that one measly slice of baguette.
