Some days are just incredibly hectic and there isn’t much time for anything. Instead of take out, grab a rotisserie chicken and make this delicious meal.

Makes 4 servings

Ingredients

1 rotisserie chicken, shredded
4-6 packages instant ramen

For the Ginger and Scallion Sauce
2 tablespoons vegetable oil
6 stalks green onion, chopped
2 ounces ginger, grated
½ teaspoon kosher salt

For the Sauce
2 tablespoons soy sauce
2 tablespoons dark soy sauce
2 tablespoons oyster sauce
1 tablespoon sugar
1 tablespoon sesame oil

Instructions

  1. Place the green onion, ginger and salt into a bowl. In a medium saucepan on medium high heat, heat the oil until you see a whisp of white smoke or when the oil is shimmering. Carefully pour it over the green onion and ginger mixture and mix well. Set aside.
  2. Fill the saucepan with cold water and bring to a boil.
  3. In a small bowl, combine sauce ingredients. Set aside.
  4. Cook noodles for 2-3 minutes. Do not overcook.
  5. Drain the noodles. Place in individual servings bowls. Top noodles with sauce, chicken and dipping sauce.

    My family and I made the Ginger Scallion recipe with Asian Vermicelli Rice noodles. Super delicious and gone and yes we all fell in love with both the scallion and ginger dressing and also the soy sauces and oyster sauce. A couple of days later we marinades 4 med size Tuna steaks in both sauces for about 30 min before searing them on the bar b que. OH boy we’re good. Served with white rice and sliced cucumbers.
    The sauces did their thing and created a tasty tuna steak. We added hot sauce at the marinade point as well. This is a keeper for us for sure.
