This childhood favourite is sure to bring back sweet memories. My mom used to make this a lot because it was quick, simple and inexpensive. As kids, we would fight over the last bits in the dish when the winner would get to add a final scoop of rice to soak up all the bits of meat, egg and sauce for one final perfect bite.
I just love the texture of the silky smooth egg cooked with the savoury minced pork. We usually serve this with a side of Chinese veggies and rice. I bet your family will love this too!
Makes 4 servings
Ingredients
½ pound ground pork
6 eggs
12 half shells of chicken broth or cooled boiled water (ratio eggs to water 1:1.5)
For the Marinade
2 teaspoons soy sauce
Pinch kosher salt
½ teaspoon sugar
1 teaspoon ShaoHsing wine
1 teaspoon cornstarch
Pinch white pepper
Drizzle sesame oil
For Serving
2 teaspoons soy sauce
1 teaspoon sesame oil
Pinch white pepper
1 stalk green onion, chopped (optional)
Instructions
- In a small bowl, add pork, soy sauce, salt, sugar, ShaoHsing wine, pinch white pepper, drizzle sesame oil and stir in one direction until pork is sticky and all ingredients are well mixed together. Gently press the pork down into an oven safe dish with 2-3 inch depth that will fit in your pressure cooker or your steamer.
- In a separate bowl, beat eggs and water or broth. Pour the egg mixture over the pork. Cover the dish with plastic wrap, foil or a silicone lid.
Electric Pressure Cooker
- Add 1 cup of water in the liner of your pressure cooker. Make foil slings for trivet for easy removal after cooking. Place the covered dish on top of the trivet.
- Close and lock the lid, making sure the steam knob is on Sealing/Locked. Pressure cook on high for 10 minutes.
- Once the cooking is done, quick release the pressure.
- Carefully remove the dish from the cooker.
- In a small bowl, combine soy sauce, sesame oil and ground white pepper. Gently spoon mixture over the egg. Garnish with green onion.
Stovetop
- Place the covered dish on a trivet in a wok or a steamer with enough water to steam on medium heat for 20-25 minutes and cover with a lid.
- Remove the lid from the wok or steamer and then carefully remove the dish from the wok or steamer.
- In a small bowl, combine soy sauce, sesame oil and ground white pepper. Gently spoon mixture over the egg. Garnish with green onion.
